This is the method I used to record from my radio card and streaming media:

I used wmix (http://dockapps.org/file.php/id/58) to select the
recording channel and set volume levels.

I used audacity (http://audacity.sourceforge.net/) to record to file.

When using wmix, the cyan colored box on top of the left/right arrows
can be clicked.  This sets the selected channel as the "recorded
channel".  Then fire up audacity and it will record that channel.
