Now I get a result when searching with ldapsearch, it seems the "base" object was created (using objectclasses top and domain).
And it seems like I can add entries using ldapadd. Hooray!
Sorry about the missing docs. I'm working on a howto doc for running DS in OpenShift, hope to publish it soon.
