And I am extremely confuzzled about 389-console vs 389-ds-console vs cockpit-ui

389-console and 389-ds-console are part of 389-ds.

To install all required packages on CentOS7, enable EPEL repo and run

# yum install 389-ds

To set up the admin server instance, run

# setup-ds-admin.pl

Are there any clues available ?

I recommend following this RHDS installation guide:  

https://access.redhat.com/documentation/en-us/red_hat_directory_server/10/html-single/installation_guide/index 

There are minor differences in the naming (redhat-ds vs. 389-ds, redhat-idm-console vs. 389-console), but the rest should be the same.
