To manage custom schema for an instance, you can add the entries you
need into "/etc/dirsrv/slapd-instancename/schema/99user.ldif", and
restart the server (or run the schema reload task).

I can't find many good examples of schema with postfix/dovecot : if you
attach the schema you have I can have a look to help you work out if
it's suitable or not.
