I installed them. Then when I try to run setup-ds-admin.pl, it's not
found.
It is provided by the 389-admin package.
Doing: yum whatprovides */setup-ds-admin.pl it results in nothing
found. Help! Is there another guide somewhere that will tell me
exactly what packages to install?

CentOS used to provide centos-ds* packages which were rebranded versions
of the redhat-ds* packages provided by RHEL. I suppose you could try that.
Otherwise, you'll have to use the 389* packages from EPEL6
